Chicken, Bacon & Eggplant Pesto Penne

penne pasta
1 tsp olive oil
1 tsp chilli
1 tin chopped tomatoes
1 small jar eggplant pesto
500g chicken thighs, cubed
3 rashers bacon, chopped
salt & pepper to taste
parmesan cheese to serve

Cook penne pasta according to packet directions
Heat oil in a large frypan and fry bacon, brown chicken then add tomatoes, pesto and salt & pepper to taste.
Drain pasta and add to frypan and mix well.
Serve with parmesan cheese.

Serves 3-4

31May10 Special-K: I made this up tonight with things I had on hand and it was delicious, I will definitely make this again.
